Thông Số Kỹ Thuật Về Rượu
• Ngâm gạo: Trước khi nấu cơm rượu ta nên tiến hành ngâm gạo khoảng 30-40 phút cho gạo trương nở, tránh tình trạng vón cục khi tiến hành nấu.
• Nấu cơm rượu: Nấu cơm rượu nên nấu như cơm ăn bình thường không được nấu sống, phải chính đều. Nếu cơm hơi ướt (nhão) cũng dùng được tiếp cho quá trình vào men sau này.
Phối Trộn Men
• Sau khi cơm nấu rượu được làm nguội xuống nhiệt độ khoảng từ 25- 30 độ C thì cho men rượu vào phối trộn.
• Tùy theo kinh nghiệm mỗi hộ cũng như tùy loại men khác nhau mà cho tỷ lệ men khác nhau. Nhưng thông số trung bình cho những loại men là 3-4kg/100kg gạo.
Thời Gian Lên Men
Quá trình lên men rượu được lên men hai lần:
• Lên men hở: Sau khi trộn men cho vào thiết bị lên men giữ nhiệt độ khoảng 25-27 độ C, thời gian ủ 10-15 ngày.
• Lên men kín: Sau thời gian lên men kín xong cơm rượu được cho thêm nước vào khoảng từ 1.5-2 lít nước/01kg gạo, thời gian lên men lỏng này khoảng từ 5-7 ngày. Sau thời gian lên men thu được dịch rượu trước khi đem chưng cất.
Chưng Cất
Sau thời gian lên men dịch rượu được chưng cất. Trong khi chưng cất rượu, thường chia ra làm ba đợt:
• Đợt đầu thu được rượu có nồng độ cồn từ 55-65 độ được gọi là rượu đầu. Rượu này thường có hàm lượng andehyt cao, khi sử dụng loại rượu này người tiêu dùng dễ bị ngộ độc có tác hại đến sức khoẻ. (Cho nên thường phải ngắt rượu đầu bỏ đi)
• Đợt sau thu được rượu có nồng độ cồn khoảng 35-45 độ được gọi là rượu giữa và người nấu rượu thường lấy rượu này làm sản phẩm cung ứng cho người tiêu dùng.
• Phần rượu chưng cất còn lại được gọi là rượu Cuối, rượu này thấp độ có vị chua mùi không còn thơm nữa. Tùy theo yêu cầu mà người sản xuất lấy nhiều hay ít lượng rượu này sau đó pha chung với dịch rượu để chưng cất lại.
